Is it as good as it sounds? Why yes, it is. I, of course have to attribute the recipe to How to Cook Everything by Mark Bittman. To add, I adjusted the taste to flavor; extra sea salt and extra pepper.
The recipe consists of the following:
1. Roasted red peppers
2. Olive oil
3. Garlic
4. Balsamic Vinaigrette
With those for ingredients, it’s a surefire food sure to make an impact on date night, study night or college games.
Later, I bought Ciabata bread and spread olive oil all over it and topped it with some of this red pepper relish. Now, I might not be a fan of peppers, let alone roasted peppers, but mmm-mmm-mmm, boy was this yummy. The only thing I think it was missing was a sprinkling of sea salt right on top for that extra kick. Not to mention, most of this recipe is done in the oven and requires very little attention.
