I had some time on my hands to make some old-fashioned Chicken Fricasse. It had all the good stuff in it: chicken, carrots, onions, celery, chicken broth, wine, salt, pepper. I pulled this recipe from Myrecipes.
You can’t go wrong with something so delicious. Cook this over the weekend, and you have got dinner or lunch for a few days.
My favorite part of making the dish was sauteeing the vegetables. They were so colorful. Just look at the whites and purples and yellows and greens. It’s like the color of the rainbow.
